What makes **Israeli Kosher wine** special are its extremely strict winemaking and religious regulations:
* **Entire process handled by dedicated personnel**: From grape harvesting to bottling, the entire process must be personally carried out by devout Jews who observe Shabbat. Regular winemakers can only provide verbal instructions.
* **Pure and vegan ingredients**: All fining agents and additives must be Kosher certified. Gelatin or egg whites are prohibited, ensuring the wine is natural and vegan.
* **Religious tax and fallow land**: It must adhere to the "Shmita" (sabbatical year for land) regulation, which dictates a halt in production every seven years, and a portion of the yield must be donated to the poor, combining deep faith with sacred historical traditions.
**Grape varieties used**:
Due to wartime strife, many native grape varieties were destroyed in conflicts. Modern Israeli wines primarily use grape varieties from European countries, mostly introduced by French Jews.
