MACERATION – Cold Maceration before fermentation two days, fermentation 10 days, maceration
post fermentation two-three weeks.
ALCOHOL FERMENTATION – stainless tanks from 2000-6000 liters per tank
MALOLACTIC FERMENTATION - stainless tanks from 6000-12000 liters per tank
USING SO2 – after malolactic fermentation
AGING - French oak barrels aging for 18 months, 45% new oak barrels, 55% barrels of two wines.
Then aging in bottle for 6 months.
