MACERATION – Cold Maceration before fermentation two days, fermentation 10 days, maceration
post fermentation two-three weeks.
ALCOHOL FERMENTATION – stainless tanks from 2000-6000 liters per tank
MALOLACTIC FERMENTATION - stainless tanks from 6000 liters per tank
USING SO2 – after malolactic fermentation
AGING - French oak barrels aging for 24 months, 60% new oak barrels, 40% barrels of two wines.
Then aging in bottle for 12 months.

DESCRIBTION OF THE WINE - The well-balanced palate is soft and rich with plum and dark cherry
flavors highlighted by fine tannins. Recommended to open and decant at least one hour prior to
drinking.
